Happy National Breakfast Week!

What a wonderful thing to celebrate! This week I have a rotation that is particularly easygoing. Pair that with an aching leg and you’ve got some slow mornings filled with breakfast and the Today Show. Today, I made a version of French toast that nobody can argue with: scramble one egg with a splash of vanilla, cinnamon, and almond milk and you’ve got just enough to make two pieces of French toast – the perfect portion! Add a sliced up apple microwaved for two minutes with a sprinkle of cinnamon, a dallop of plain Greek yogurt, and a drizzle of reduced sugar pancake syrup (okay well that was a little indulgent) and you’ve got a filling breakfast with protein, whole grains, plenty of fiber, and almost no added sugar (none if you omit the syrup). With the bread I used, this whole thing ends up being around 300 calories. How was your breakfast??
